number of services to food companies in relation to HACCP. HACCP Audit and
Certification
We carry out
audits of food safety management systems (HACCP) to determine the level of
compliance with legal requirements. The audit covers
physical conditions, the documented HACCP system and its implementation, and
management aspects of food safety control. On successful
completion of the audit the company is issued with a certificate valid for
one year. This can be presented to purchasers as independent evidence of a
properly drawn up and implemented HACCP system. The scheme has

a HACCP system A HACCP system is
unique to each company. You cannot import a system from another company and
hope that it will be effective for you. Even a similar company in the same
business will have some hazards that are different to yours. Your system must
be based on your specific circumstances, and only your personnel know in
detail the hazards that can arise in your operation. So, the hazard
identification exercise can really only be carried out by you. To do an
effective HACCP study you should gather together a group which collectively
has all the necessary knowledge about microbiology, the technicalities of the
product, the operational details of its preparation or manufacture, the
engineering features of the equipment used, the type of consumer, the logistical
problems of transport and distribution. Very often
companies do not have sufficient internal expertise to carry out the HACCP
study without help, and we can provide assistance in this. We will guide you
through the process of hazard identification and risk assessment and help you to identify suitable means of controlling
the risks. When we are finished you will have drawn up a HACCP plan and will
have identified the necessary controls to give effect to the plan. Where does HACCP

hygiene training for food handlers, whether in manufacturing operations or
retail outlets. For Irish clients
we can provide training under two accredited schemes, FAS Foundation Hygiene

For companies who
need to have their suppliers audited we can carry out this auditing to your
requirements. This may be particularly useful to overseas companies sourcing
materials in Ireland. The audit can include a discussion of specific points
that are causing difficulty, perhaps in relation to complaints or
non-conforming materials supplied in the past. |
